Ultimate Shrimp Grilled Cheese with Garlic Butter

 

 

Ingredients:

 

4 slices of thick bread (like sourdough or your favorite kind)

 

1/2 lb shrimp, peeled and deveined

 

3 tbsp melted butter

 

2 garlic cloves, minced

 

1 cup shredded mozzarella cheese

 

1/2 cup grated Parmesan cheese

 

Salt and pepper, to taste

 

Fresh parsley, chopped (optional)

 

 

 

Directions:

 

1. Heat a skillet over medium-high heat. Season the shrimp with salt and pepper, then sauté in the melted butter with garlic until cooked through and pink (about 3-4 minutes). Set aside.

 

 

 

2. Brush one side of each slice of bread with melted butter and sprinkle with minced garlic.

 

 

 

3. Place mozzarella and Parmesan cheese on the unbuttered side of two bread slices.

 

 

 

4. Add the cooked shrimp on top of the cheese, then close with the remaining bread slices (buttered side facing out).

 

 

 

5. Using the same skillet, grill the sandwiches over medium heat, pressing gently, until the bread is golden brown and crispy, and the cheese is melted (about 4-5 minutes per side).

 

 

 

6. Sprinkle with fresh parsley, if desired, and serve hot with a side of chips or a salad.
