Fresh Cucumber and Beet Salad

Ingredients

 

1. 4-6 cucumbers, sliced

2. 1 tablespoon salt

3. 1 medium carrot, peeled and grated

4. 1/4 cup chopped green onion

5. 40ml olive oil

6. 20g sugar

7. 20ml soy sauce

8. 15g paprika

9. 20g sesame seeds

 

Optional Ingredients

1. 1/4 cup chopped fresh cilantro

2. 1/4 cup diced red bell pepper

 

Instructions:

1. In a large bowl, combine the sliced cucumbers and salt. Let it sit for 10-15 minutes to allow the cucumbers to release excess water.

2. Rinse the cucumbers with cold water and drain well.

3. In the same bowl, combine the grated carrot, chopped green onion, olive oil, sugar, soy sauce, paprika, and sesame seeds.

4. Add the drained cucumbers to the bowl and toss everything together until well combined.

5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow the flavors to meld.

6. Just before serving, garnish with chopped fresh cilantro and diced red bell pepper (if using).

7. Serve chilled and enjoy!
