Ingredients:
1 lb (450g) ground beef
1 medium onion, diced
2 cloves garlic, minced
1 cup (200g) uncooked white or brown rice
2 cups (475ml) beef or chicken broth
1 can (10.5 oz) cream of mushroom or cream of chicken soup
1 cup (240ml) milk
1 ½ cups (150g) shredded cheddar cheese (divided)
1 can (14.5 oz) diced tomatoes (drained)
1 tsp paprika
½ tsp onion powder
½ tsp garlic powder
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Instructions:
Preheat Oven: Preheat your oven to 375°F (190°C).
Cook Beef Mixture:
In a large skillet over medium heat, brown the ground beef until no longer pink.
Add the diced onion and minced garlic; sauté until softened (about 2-3 minutes).
Drain excess grease if necessary.
Combine Wet Ingredients:
In a mixing bowl, whisk together the cream of mushroom soup, milk, and broth.
Stir in the paprika, onion powder, garlic powder, and a pinch of salt and pepper.
Assemble Casserole:
Spread the uncooked rice evenly on the bottom of a greased 9×13-inch baking dish.
Layer the cooked beef mixture over the rice.
Pour the soup mixture evenly over the top.
Add the drained diced tomatoes.
Add Cheese:
Sprinkle half of the shredded cheddar cheese over the casserole.
Bake:
Cover the casserole tightly with aluminum foil and bake for 40-45 minutes or until the rice is tender and the liquid is absorbed.
Remove the foil, sprinkle the remaining cheese on top, and bake uncovered for an additional 10 minutes, or until the cheese is melted and bubbly.
Serve:
Garnish with fresh parsley if desired and serve warm.
Enjoy this comforting and flavorful dish!
