Ingredients:
For the Cauliflower Base:
1 large head cauliflower, cut into florets
2 tablespoons olive oil
Salt and pepper to taste
For the Chicken Layer:
2 large chicken breasts, diced
1 teaspoon garlic powder
1 teaspoon dried oregano

For the Cheese Sauce:
1 cup heavy cream
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
2 oz cream cheese
1 teaspoon garlic powder
1/2 teaspoon dried thyme
Topping:
1/2 cup shredded cheddar cheese
2 tablespoons chopped fresh parsley
Directions:
1. Preheat the oven to 400°F (200°C). Prepare a 9×13 inch baking dish by lightly greasing it.
2. Toss cauliflower florets with olive oil, salt, and pepper. Spread them evenly on a baking sheet and roast for 15 minutes until slightly golden and tender.
3. In a separate pan, cook diced chicken with garlic powder, oregano, salt, and pepper until fully cooked and lightly browned, about 6-8 minutes.
4. For the cheese sauce, combine heavy cream, cheddar, mozzarella, Parmesan, cream cheese, garlic powder, and thyme in a saucepan. Heat over medium-low, stirring constantly until smooth and creamy.
5. Layer the roasted cauliflower in the prepared baking dish. Top with cooked chicken pieces.
6. Pour the cheese sauce evenly over the chicken and cauliflower.
7. Sprinkle additional cheddar cheese on top and bake for 15-20 minutes until cheese is melted and bubbly.
8. Remove from oven, garnish with fresh parsley, and let cool for 5 minutes before serving.
