Chicken Taco Cottage Cheese Bake

Ingredients (for 5 people):

3 cups bell peppers + onions, finely chopped
2½ cups cooked diced or shredded chicken
1¼ cups low-fat cottage cheese, blended smooth
4 eggs
1¼ cups shredded cheddar or Mexican blend cheese
¼ cup grated Parmesan (optional)
2 tsp taco seasoning
½ tsp garlic powder
¾ tsp salt + black pepper
Optional: ½ cup drained salsa or diced green chiles

Instructions:

Preheat oven to 400°F / 200°C and grease a 9×9-inch baking dish.
Lightly sauté peppers and onions for 3–4 minutes or use thin raw slices.
Whisk blended cottage cheese with eggs until smooth. Stir in cheese, Parmesan, taco seasoning, garlic powder, salt, pepper, chicken, peppers, onions, and salsa if using.
Spread into the dish and bake for 25–30 minutes until set and golden at the edges.
Let cool 5–10 minutes before slicing.
