Slow Cooker Broccoli Cheddar Soup

What you need:

– 4 cups broccoli florets
– 4 cups vegetable broth
– 1 cup shredded cheddar cheese
– 1 cup diced potatoes
– 1 cup heavy cream
– 1 onion, chopped
– Salt and pepper to taste

How to make it:

Dump everything into the slow cooker.
Stir it up a bit.
Cook on low for 6-8 hours or high for 3-4 hours.
Blend if you want it smooth, or leave it chunky.
Add more cheese before serving if you like.
Season with salt and pepper to taste.

Optional / Notes:

– You can toss in any veggies you want!
– I used frozen broccoli but fresh works too.
– Any cheese works if you don’t have cheddar!

Serve with:

– Crusty bread or crackers for dipping.
– A side salad for some crunch.
