Cheesy Fajita Chicken Casserole

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 1 tablespoon olive oil
  • 1 packet fajita seasoning mix
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup sour cream
  • 1/4 cup chopped fresh cilantro
  • Salt and pepper to taste
  • Optional: sliced jalapenos for extra heat

Directions

 

 

  1. Preheat the oven to 375°F (190°C) and grease a baking dish with cooking spray.
  2. Slice the chicken breasts into thin strips and season with salt, pepper, and half of the fajita seasoning mix.
  3. Sauté the seasoned chicken in a skillet until cooked through, then set aside.
  4. In the same skillet, sauté sliced bell peppers, onions, and the remaining fajita seasoning mix until tender-crisp.
  5. Combine the cooked chicken, sautéed vegetables, sour cream, half of the cheddar and mozzarella cheeses in a bowl.
  6. Transfer the mixture to the greased baking dish and sprinkle with the remaining cheeses.
  7. Bake in the preheated oven for 20-25 minutes until the cheese is melted and bubbly.
