Ingredients:

2 cups mashed potatoes (leftover or freshly made, cooled)

1 cup shredded cheese (cheddar, mozzarella, or a mix)

2 large eggs

1/4 cup milk or cream

1/4 cup grated Parmesan cheese

2 tbsp chopped green onions or chives (optional)

1/2 tsp garlic powder

Salt and pepper to taste

Nonstick cooking spray

Instructions:

Preheat the oven:

Preheat your oven to 375°F (190°C) and grease a muffin tin with nonstick cooking spray.

Prepare the potato mixture:

In a large mixing bowl, combine the mashed potatoes, shredded cheese, eggs, milk, Parmesan cheese, green onions (if using), garlic powder, salt, and pepper. Mix until smooth and well-combined.

Fill the muffin tin:

Spoon the potato mixture into the prepared muffin tin, filling each cup about 3/4 full. Smooth the tops with the back of a spoon.

Bake:
