1 medium onion, finely chopped
2 cloves garlic, minced

1 (15 oz) can diced tomatoes
1 (15 oz) can tomato sauce
1 cup corn kernels (fresh, frozen, or canned)
1 cup black beans, drained and rinsed (optional)

2 cups shredded cheese (cheddar, Monterey Jack, or a blend)

Preheat oven to 375°F (190°C).
Lightly grease a 9×13-inch baking dish with cooking spray or oil.
Step 2: Cook the Meat Mixture
In a large skillet over medium heat, cook the ground meat until browned, breaking it into small pieces with a wooden spoon. Drain excess fat if needed.
Add the onion and garlic, cooking for 2–3 minutes until softened.
Stir in the taco seasoning, diced tomatoes, tomato sauce, corn, and black beans (if using).
Simmer for 5–7 minutes, stirring occasionally, until flavors meld. Remove from heat.
Step 3: Assemble the Bake
Spread a thin layer of the meat mixture on the bottom of the baking dish.
Place 3–4 tortillas over the meat, overlapping as needed to cover.
Add another layer of meat mixture, followed by a generous sprinkle of cheese.
Repeat layers, ending with a final layer of tortillas, topped with remaining meat and a thick layer of cheese.
Step 4: Bake
Cover with aluminum foil and bake for 20 minutes.
Remove foil and bake uncovered for 10–15 minutes, until cheese is bubbly and golden.
Step 5: Serve
Let cool for 5–10 minutes before slicing.
Top with optional garnishes and serve warm.
