Cinnamon Honey Butter Sweet Potato Cornbread

Ingredients:

For the Sweet Potato Cornbread:

 

1 cup mashed sweet potatoes

1 cup yellow cornmeal

1 cup all-purpose flour

1/4 cup honey

1 tablespoon baking powder

1/2 teaspoon salt šŸ§‚

1 teaspoon ground cinnamon

2 large eggs

1/2 cup melted butter šŸ§ˆ

1 cup buttermilk šŸ„›

For the Cinnamon Honey Butter:

 

1/4 cup honey

1/2 teaspoon ground cinnamon

1/2 cup softened butter šŸ§ˆ

Instructions:

 

Preheat your oven to 375F 190C and grease or line your baking dish with parchment paper.

In a large bowl, mix together cornmeal, flour, baking powder, salt, and cinnamon.

In another bowl, combine mashed sweet potatoes, eggs, melted butter, buttermilk, and honey. Stir until smooth.

Pour the wet ingredients into the dry ingredients and stir gently until just combined.

Pour the batter into the prepared baking dish and bake for 25-30 minutes, or until golden and a toothpick comes out clean.

While the cornbread bakes, mix together honey, cinnamon, and softened butter in a small bowl.

Once the cornbread is done, let it cool slightly and serve with a dollop of cinnamon honey butter on top.
