High Protein Fajita Enchilada Cottage Cheese Chicken Bowls
Ingredients:
340 g cottage cheese
500 g cooked shredded chicken
1 cup red enchilada sauce
175 g shredded cheddar or Monterey Jack cheese
0.5 cup canned black beans rinsed and drained
1 tsp fajita seasoning
Salt to taste
Black pepper to taste
1 avocado sliced
0.25 cup chopped cilantro
5 tbsp Greek yogurt or light sour cream
Directions:
Step 1 Preheat the oven to 375 degrees Fahrenheit.
Step 2 In a large mixing bowl combine the cottage cheese red enchilada sauce fajita seasoning salt and black pepper.
Step 3 Stir the mixture thoroughly until it becomes smooth and creamy.
Step 4 Add the cooked shredded chicken and the rinsed black beans to the bowl.
Step 5 Fold the ingredients together until the chicken and beans are evenly coated with the sauce mixture.
Step 6 Divide the mixture evenly into five small oven safe baking dishes or meal preparation containers.
Step 7 Sprinkle the shredded cheddar or Monterey Jack cheese evenly over each portion.
Step 8 Place the dishes into the oven and bake for 12 to 15 minutes until the mixture is hot and the cheese on top is melted and bubbly.
Step 9 Remove the dishes from the oven and allow them to cool slightly.
Step 10 Top each bowl with sliced avocado chopped cilantro and a spoonful of Greek yogurt or light sour cream before serving.
