Ingredients:
4 large Cubanelle peppers, any color
1 lb ground beef or ground turkey
1 onion, finely chopped
2 cloves garlic, minced
1 cup cooked rice
1 can (14.5 oz) diced tomatoes
1 tsp paprika
Salt and pepper
Shredded mozzarella cheese (optional)
Instructions:
Preheat oven to 375°F
Cut off pepper tops, remove seeds, membranes
Cook rice, let cool
Sauté onion, garlic until softened
Add ground meat, cook until browned
Stir in cooked rice, diced tomatoes, paprika
Stuff each pepper with meat mixture
Top with mozzarella cheese (if using)
Bake 25-30 min or until peppers tender
