Marinated Cucumber, Onion, and Tomato Salad

Ingredients:

  • 2 cucumbers, sliced
  • 1 pint cherry tomatoes, halved (or 2 large tomatoes, chopped)
  • 1 small red onion, thinly sliced
  • ½ cup apple cider vinegar (or white vinegar)
  • ¼ cup olive oil
  • 1 tbsp sugar (optional)
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp garlic powder
  • ½ tsp dried oregano (or Italian seasoning)
  • 1 tbsp fresh parsley or basil, chopped (optional)

Instructions:

  1. In a large bowl, combine the cucumbers, tomatoes, and onion.
  2. In a small bowl, whisk together the vinegar, olive oil, sugar, salt, pepper, garlic powder, and oregano.
  3. Pour the dressing over the vegetables and toss to coat evenly.
  4. Cover and refrigerate for at least 1 hour (or overnight for more flavor).
  5. Garnish with fresh parsley or basil before serving.

Note: For the best flavor, let the salad marinate in the fridge for at least an hour before serving. Overnight marination enhances the taste even more!  Feel free to adjust the seasoning and add fresh herbs like basil or dill for extra freshness.
