Ingredients:
🧈 2 tbsp butter
🧅 1 medium onion, finely chopped
🥔 2 medium potatoes, peeled and diced
🌽 2 cups fresh or frozen sweet corn kernels
🦐 1 lb shrimp, peeled and deveined
🥛 3 cups chicken or vegetable broth
🥛 2 cups heavy cream or whole milk
🧂 1 tsp paprika
🧂 1/2 tsp cayenne pepper (optional)
🧂 Salt and pepper to taste
🌿 Fresh parsley or chives, for garnish
Instructions:
1️⃣ Sauté Aromatics:
In a large pot, melt the butter over medium heat. Add the onion and cook until soft and translucent, about 5 minutes.
2️⃣ Cook Potatoes and Corn:
Add the diced potatoes and corn kernels to the pot. Stir in the chicken or vegetable broth and bring to a boil. Reduce the heat and simmer for 15 minutes, or until the potatoes are tender.
