Morning Dew Cake
Ingredients:
2 cups all-purpose flour
1 cup granulated sugar
1 tablespoon baking powder
1/2 teaspoon salt
1 cup milk
1/2 cup vegetable oil
2 large eggs
1 teaspoon vanilla extract
Zest of 1 lemon
Juice of 1 lemon
1 cup powdered sugar, for glaze
Directions:
Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
In a separate bowl, whisk together the milk, vegetable oil, eggs, vanilla extract, lemon zest, and lemon juice until well combined.
Gradually add the wet ingredients to the dry ingredients, stirring until just combined.
Pour the batter into the prepared baking pan and spread it out evenly.
Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
Remove from the oven and let cool completely in the pan on a wire rack.
