Strawberry Cheesecake Stuffed Cookies

Ingredients :

 

½ cup unsalted butter, softened.

½ cup granulated sugar.

½ cup brown sugar.

1 large egg.

1 tsp vanilla extract.

1 ¾ cups all-purpose flour.

½ tsp baking soda.

¼ tsp baking powder.

¼ tsp salt.

½ cup freeze-dried strawberries, crushed.

4 oz cream cheese, softened.

2 tbsp granulated sugar.

1 tsp vanilla extract.

¼ cup strawberry jam or puree.

 

Directions :

Mix cream cheese, sugar, vanilla, and strawberry jam/puree until silky.

Cover and place in the fridge while you work on the cookie dough.

Cream butter, white sugar, and brown sugar until light and airy.

Blend in the egg and vanilla until the mixture is smooth.

In another bowl, combine flour, baking soda, baking powder, and salt.

Gradually integrate dry mixture into the wet to form a smooth dough.

Mix in the crushed freeze-dried strawberries.

Cover dough and cool it in the fridge for 30 minutes.

Preheat the oven to 350°F (175°C) and prepare a baking sheet with parchment.

Scoop out 1 tbsp of dough, flatten, then add ½ tsp of cheesecake filling in the center.

Press another tbsp of dough over the filling and seal the edges to form a ball.

Arrange dough balls onto the baking sheet and bake for 12-15 minutes until edges are golden.

Allow cookies to rest on the baking sheet before transferring them to a cooling rack.

Revel in the delightful cookies with their creamy strawberry center.
