Here’s a hearty Sausage & Cream Cheese Hash Brown Breakfast Casserole that’s great for brunch, meal prep, or feeding a crowd.

Sausage & Cream Cheese Hash Brown Breakfast Casserole

Ingredients

450 g breakfast sausage (pork, turkey, or chicken)
225 g cream cheese, softened and cubed

700–800 g frozen shredded hash browns, thawed
1½ cups (170 g) shredded cheddar cheese

8 large eggs
1 cup (240 ml) milk

1 tsp garlic powder
1 tsp onion powder

½ tsp paprika (optional)
Salt and black pepper, to taste

2 green onions, sliced (optional, for garnish)

Instructions

Preheat the oven to 175°C. Grease a 23 × 33 cm baking dish.
Cook the sausage in a large skillet over medium heat, breaking it into crumbles. Drain excess fat if needed.
Add the cream cheese to the warm sausage and stir until melted and evenly combined.
Spread the thawed hash browns evenly in the prepared baking dish.
Spoon the sausage and cream cheese mixture over the hash browns.

Sprinkle the shredded cheddar evenly on top.
In a bowl, whisk together the eggs, milk, garlic powder, onion powder, paprika (if using), salt, and pepper.
Pour the egg mixture evenly over the casserole.
Bake for 50–60 minutes, or until the center is set and the top is golden brown. A knife inserted into the center should come out clean.
Let the casserole rest for 10 minutes before slicing. Garnish with green onions if desired.

Assemble the casserole the night before, cover, and refrigerate. The next morning, let it sit at room temperature for about 20 minutes while the oven preheats, then bake as directed. You may need to add 5–10 minutes to the baking time if it’s still quite cold.

Refrigerator: Store leftovers in an airtight container for up to 4 days.

Freezer: Freeze individual portions for up to 2 months. Thaw overnight in the refrigerator and

reheat in the microwave or a 175°C oven until warmed through.
